You are looking for an easy but delicious soup recipe but you don’t want to spend hours in the kitchen to prepare it?! Here is a recipe for an easy-peasy, delicious soup with lentils and vegetables. The best – you only need five ingredients and about 30 minutes to cook it and it’s definitely no rocket science even if you’re not a well practiced cook you can do it. It’s really simple but super delicious.

What you need for the lentil soup
Preparations
Let’s start with the lentils. I usually buy yellow ones (they actually look red) because they are a lot easier to handle. I wash them like suggested on the packaging (everything is well described, so don’t worry). Next I cut up the soup vegetables like carrots, leek, celery etc. and pour it with the lentils into a pot and fill it up with water. I normally use 3 to 4 times as much water as lentils – so 1 cup of lentils and 3 to 4 cups of water.
Boil the lentils to the heat
Now I bring it to the boil before I season it with some broth or just a bit salt and fresh pepper. Spice it up just how you like it. While the soup cooks be careful because it boils over easily. So better reduce the heat and simmer the soup until the lentils are soft but not too mushy. I usually cook the soup for about 20 minutes.
Let’s serve it
Before I serve the soup I use parsley as garnish and for a better and fresher taste. But it’s not essential, just how you like it. So easy and so good. Enjoy your meal and don’t hesitate to tell me if you liked it or if you changed something?!
